Examination of internal organs in beef side-liver-

Examination of the external surface of carcass is important but not more than that done for internal organs 

we'll mention each organ separatly 

*liver 

normal liver of beef carcass is of the following criteria:consists of 3 lobs,caudate lobe of rounded extremities,with shallow umblical fissure,with smooth surface no inter lobular connective tissue,with brownish red color ,and pear shaped gall bladder

any abnormalities in these criteria necessitate special precaution according to the degree

first by inspection detect any abnormal color or presence of any lesions 

second by palpation detect any nodules or abnormal consistency 

third by making  an incision in the hepatic parenchyma to detect any fibrosis results from parasites or any affections

fourth by making incision in hepatic lymph nodes for detection of TB

abnormalities found in the liver may be one of the following:

****telangiectasis(cavernous haemangioma)

irregular in shape lesions ,spongy in appearance ,consists of dilated sinusoids filled with blood (so appear as purplish to bluish black depressed area 

judgement :

depend on the degree of the affection 

severly affected liver should be condemned 

slightly affected liver may pass for consumption after removal of affected parts

*****pathological fatty changes 

judgement :condemned 

*****enlargement of liver 

condemned

*****necrosis in parenchyma

partial condemnation of affected part

*****TB

condemned

*****liver abscesses

partial condemnation of affected part

*****cirrhosis 

condemnation of liver 

*****fascioliasis

markedly affected liver requires condemnation 

lightly affected organ partial condemnation of affected part

*****hydatid cyst 

conemnation by burning or burying at deep distance enough to prevent dogs from reach to it

*****linguatula larvae

partial condemnation of affected parts

*****cysticecus bovis 

condemned and the carcass need more investigation
